Servings 6 pieces

Ingredients

  • 2 cups baker's flour
  • 1 ½ tsp baking powder
  • salt
  • extra virgin olive oil
  • 2 tbsp maple syrup/honey
  • ¾ tap water not hot!!!
  • veg oil for cooking

Instructions

  • Whisk the dry ingredients together then make a well in the middle.
  • Add in the wet ingredients (save some water). Stir with a wooden spoon until just combined.
  • Flour the bench, dump the dough onto the bench and knead about 10 times until it's looking nice and smooth. (You might need to knead it for a bit longer but that's okay). If it's too dry slowly add the remaining water bit by bit.
  • Leave covered for 10 minutes. While sitting, heat veg oil in pan over med heat. Get a plate and put some paper towel on the bottom. Clean up your kitchen.
  • Once set, separate dough into six equal sized parts. Stretch or roll one out until it's at your desired size/thickness. (We have ours about 1mm thick and they come out beautifully). Put in pan and cook until golden (about 1-2 mins), poke dough with fingers (like a claw) to give it the textured look. Flip and fry for another 1-2 mins. When golden on both sides transfer to plate with paper towel. While each flatbread is cooking, roll the next one. You might need to add some oil between breads but normally I add an additional tbsp half way through – depends how crispy you like it.

Notes

Goes well with tacos, dips, as a wrap, pizza base if you’re feeling lazy and don’t want to wait for dough to rise.
